Well, today started off with a BANG!! Lightening struck the transformer in our backyard and we were without power most of the day. The triplets had energy bars before swimming. After swimming, the power was still off, so we went to McDonald's for lunch. By the time the power came on, I barely had enough time to make my pizza dough! Note to self: make some pizza dough and freeze it!!  
                                                                                                                                       
Pizza Rolls

I found this recipe at Let's Dish and I HAD to make them!!  And yes, they were VERY yummy! Eva said to me when she went to bed, "Mom, make those again!" Not a problem sweetie, I loved them too!

Ingredients
Pizza Dough (I used my regular pizza dough recipe)
Pizza sauce
2 cups shredded mozzarella cheese
1/2 cup shredded Parmesan cheese
1 cup sliced pepperoni, chopped

Directions
Preheat oven to 425 degrees. Divide pizza dough in half.  Roll each half into a rectangle, about 1/4 inch thick and 12 inches long.  Spread with pizza sauce. Sprinkle each half with equal amounts of cheeses and pepperoni.  Starting at a short end, roll dough up tightly to form a log.  Slice into 1-inch pieces.  Place rolls on lightly greased baking sheets.  Bake for 10 minutes or until browned on top.  Serve with warm marinara sauce for dipping.

** What I did differently:  I just rolled out one rectangle to about 17 x 11 (I think). I spread with pizza sauce, then sprinkled mozzerella cheese. I rolled it up, then cut them two finger width size into a 10 x 10 pan sprayed with Pam. After I got all the rolls into the pan, I put mini pepperoni's on some of them since Eva and Ella do not like pepperoni. Baked at 350 degrees for 20 min's

Mom's Lunch: Turkey and Colby on a thin bagelwhich, potato salad, chocolate teddy grahms, pretzel sticks, and strawberry tootsie rolls.  Dad's lunch was in an old container we used to use when we were first married that I found in a box when I was going through stuff in the basement.  I guess I'll keep it!

 We took a trip to the zoo and here's what I packed us for our lunch. Using the Easy Lunchboxes for the kids lunches and Ziploc for mine and dad's, I REALLY like the Easy Lunchboxes and want to get more!

Eva's Snack: Mini Whole Wheat Bagel, Steamed Crisp Broccoli, Colby Cheese Squares


Apple Pie Squares
This was REALLY delicious!! Make your favorite 3 cups flour pie crust recipe. Cut off 1/3 for the top crust, the rest for the bottom crust. Roll out to fit into a 13x9 pan so that it comes up the sides. Then sprinkle rough shredded bread crumbs over the bottom.  Slice 8 to 9 cups of apples. Take 2/3 cups of sugar and stir in 1 tablespoon cinnamon, then sprinkle over the apples.  Roll out your top crust and gently place on top. Slice vent holes in the top crust.  Crimp the edges together and bake at 350 for an hour.

Happy Labor Day!! I read this on Simply Recipes and HAD to make it!! Take a large fat hotdog, slice it down the middle, but not all the way through.  Spread ketchup* down the slice, then pack with sauerkraut and sliced cheddar cheese. Now wrap with bacon, secure with a toothpick.  For the kids, I skipped the sauerkraut. Now grill them on low until the bacon is crisp. Enjoy with a glass of beer!
* The recipe says to mix ketchup and mustard, but I'm the only one who likes mustard.
